A truely unique Italian Sauvignon Blanc. A creamy, salty, herbal and intensely fragrant white wine, this has good minerality, freshness and aromatic depth.

Floral and herbaceous notes combine with fresh grapefruit, fruity and candied cedar flavours. Remarkably structured from the clay soils.

Perfect paired with pasta with pesto and a little wild garlic if you’ve been out for a stroll lately. Or pair with hard goats cheeses for a nice surprise.

Vineyards: All of the grapes for this wine come from Paolo’s small estate in Piemonte. Sauvignon Blanc makes up 1 of his 4 hectares, and was planted in the early 2000’s, a few years after his Barbera vines. There are also a couple of rows of Muller Thurgau which he initially planted as an experiment and now blends into his white. Although the vines sit on Terra Rossa, this portion of his land also has some stony calcareous clay which he believes adds a bit of additional tension to the wine.

Vinification: The grapes were destemmed and pressed then sedimented overnight prior to fermentation. Fermentation kicked off in steel tanks with natural yeasts and took over a month to finish. The wine stayed on its lees for three months with occasional battonage before being racked and then bottled with a tiny sulphite addition. Unfined, unfiltered.
