Bright and very fresh aperitif style red wine. Notes of ripe raspberry juice with herbal undertones and comfortable but assertive acidity. The variety is rarely seen which is a shame as here it helps create an expressive and very drinkable wine, that makes an exciting talking point at wine tastings.
Made from organically farmed fruit with no SO2 added. It undergoes carbonic maceration before being lightly foot trodden to finish fermentation. Aging is carried out in neutral oak for 6 months before bottling.
To be served chilled or cellar temperature. Native yeast fermentation, unfined/ unfiltered.
