This is a super ripe, rich and tannic cider. Apple core, apple skin and intensely ripe apples hit the nose along with something a little herbal and a bit botanical. Full bodied and rich with orange and apricot, peach and mango flavours as well as liquorice and cool, almost menthol herbs. The tannins are big but ripe and round the whole thing off perfectly.
To produce this unique cider Little Pomona pressed the Dabinett, Chisel Jersey and Harry Masters Jersey Apples straight into neutral oak and left it to ferment spontaneously. At the time they picked and froze some Blenheim Orange and some Newton Wonder, later pressing them which still frozen to extract some super sweet, super high acid nectar. This was also set to ferment spontaneously. By the time the barrel had finished fermenting and the cider was dry, the “ice cider” was still slowly fermenting. They then blended them both together into bottle, where it finished fermenting, creating a natural sparkle.
