Natural fermentation. Maceration in oak vats for 8 to 14 days. Ageing in 25/35 hl casks for 18 months. Small sulphur addition before bottling. Bottle ageing for 2 months.
This is an earthy mix of super saline stewed tangerine, stone fruit and lemon pith. Savoury and extremely complex, best served with lots of sharing plates of oily meats and cheeses. One to be drunk over a few days.
