A truelly unique wine from Modal wines and Christoph Heiss in Austria.
We’ve seen the continued rise of red and white grapes being blended to create wines that show vibrant and lifted aromatics above a body that still shows rioe red fruit and spicy dark berries. This is one of those wines, a creative mix of Cabernet Sauvignon and Chardonnay, playfully called Chabernet and made with exploration and enjoyment in mind.
Christoph’s father had planted Cabernet in the 90s and it’s a grape that always ends up in the family winery’s house red blend as they haven’t quite known what to do with it in recent times. The Chardonnay was in a lone barrel in the corner of the tank room which seemed out of place. It was our pal Nic from Modal who asked ‘What’s in the barrel?’ to be told ‘oh, that’s some experimental Chardonnay I was trying out…”
Production wise, the Cabernet was vinified and aged in steel tanks with 20% whole bunches, 12-14 days of maceration. The Chardonnay was whole bunch pressed, fermented and aged in a 500L barrel on full lees. They decided on the final blend in May 2019 and the wine was bottled in June 2019 with a small sulphite addition, unfined and unfltered.
This and the Spirals Hess Weiss are the first ever releases in what aims to be a creative series of experimenta wines from Nic Rizzi and an array of European winemakers.
