Say hello to a brand new series of mixed fermentation beer, matured in French wine barrels in Summerhall’s most enigmatic space – the Post Mortem room. A turbid wort base was created to emulate Oude Gueze production as far as we could and encourage mixed cultures of Brettanomyces and other wild yeast & bacteria to develop during ageing. By keeping the base beer the same, drinkers are truly able to gauge the impact that each individual barrel had on it. Over the course of 14 months, the Burgundy casks imparted unique flavours along with the souring bugs, eventually creating two distinctive beers made for comparing and contrasting.
