Delicately pale pink in colour. The nose is a lttle restrained but pretty, with floral and red berry notes. The palate is textural with hints of redcurrant fruit balanced by a mineral, lightly yeasty character, with fresh acidity on the finish.
Produced from 100% Sumoll. Grapes for the 2017 vintage were hand-picked on 30th August ’17 (leaf day). Then destemmed, with soft treading in an inert atmosphere. Fermented in stainless steel at 16ºC using indigenous yeast. The wine fermented for 13 days in tank and 24 days in bottle. Bottled on 13th September (root day).
