The fruit for Rouze comes from a 1ha plot of 15-year-old vines. Fermentations are spontaneous with natural yeasts, and wines are vinified without additions. Rouze is bottled un-fined and unfiltered and with <10mg sulphur. Light and refreshing and perfectly served slightly chilled. Nicolas and his wife Karine farm 25 hectares of vines in Corbieres, not far from the Mediterranean sea in the South of France. Having previously sold the grapes off to local negociants, Nicolas took over his family Domaine in 2000, beginning a painstaking conversion to organic and biodynamic viticulture. ‘Campana’ is the Occitan word for bell, which sits above the main house, and the winery adorns the labels of their ‘house’ wines – Campana Blanc, Rouge & Rose.
