Here we go! An independent bottling from Circumstance Distillery in Bristol! On the Nose lots of floral honey, beeswax, chamomile tea, dried papaya, sage, starfruits and kiwi. Some homemade elderflower corial and hints of oils and grease, canola oil and fennel seed.
On the palate this shows tropical fruits, ripe kiwis, starfruits (again), gooseberries. The honey and wax continues with chamomile and fruit teas (slightly drying) and glacier mints. This all rolls onto a finish of soft fruits, with elegant and gentle oak char and spice
Circumstance make atypical spirits which are extremely interesting and highly promising! this particular cask has been produced from 85% distilling malt & 15% raw distilling malt, fermented for 14 days with a saison yeast before being very slowly distilled. Post distillation the team take great care with diluting their spirit before filling into wood, this is a clear indication of the care and attention the team put into every aspect of production.
