From just south of Chablis, this 100% Chardonnay has been aged for 1 year in old oak before bottling. Textural and full of flavour whilst holding bright minerality. 

Clement Lavallee spent 8 years studying wine before taking over his father’s vines. He started locally at first with Domaine Verret before heading south to Domaine des Terres de Velle in Auxey-Duresses and Armand Heitz in Chassagne Montrachet.Here Clément developed the skills and the knowledge needed to make great wines from Chardonnay and Pinot Noir as well as learning about biodynamic viticulture.

Time was then spent working with other grape varieties in other regions of France, Château Margaux was followed by Domaine Chapoutier. He learnt the art of managing both small and large production volumes at the same time as ensuring that only the finest grapes and must were selected.

The vineyards passed down to Clement are worked very naturally with no insecticides and very little intervention. A great new producer to keep an eye on.
