Description
The wine is made from a selection of their best vineyards in two sites in Alentejo, Portugal. The Alvarinho and Sauvignon Blanc come from their coastal vineyards in Vila Nova de Milfontes. The Viognier from their inland vineyards in Vidigueira. Sandy granite based soils on the coast and limestone soils inland.
The grapes are pressed into 2,000L Austrian foudres and ferment naturally with native yeasts on the lees for 12 months. The wine is racked from foudres to stainless steel where it ages a further 6 months on the fine lees. The wines is bottles without sulfur and a gentle filtration.
