Description
The Winter batch release of one of the most popular Lowland whiskies. This is from Publican barley grown in the 43ac field, harvested by John and Sandy on 28th & 29th August 2009. It was then dried and stored to be malted in Alloa in 2010. The whisky is from 27 first fill ex-bourbon barrels, filled in December 2011 and stored in the upper level of their dunnage warehouse until 2024.
Daftmill is a family-owned farm that grows malting barley, potatoes and rears beef cattle. They also grow broccoli and carrots, so a pretty ideal one-stop shop for a great meal. Since 2005 they have been distilling whisky in their converted old mill building. The barley used is grown on the farm and the water is from their own well.
The distillery works in harmony with the farm where the spent lees and pot ale are used as fertiliser and the warm water runoff is used to keep the duck pond from freezing (no ice skating ducks here). This is also the reason for the Winter and Summer Batch releases, as the farm is quieter in these seasons it is a perfect time to distil whisky.
Daftmill maintains a loyal following for its seasonal, hands-on and in-house approach to whisky making. Each release is aged for a minimum of 10 years. This is traditional whisky-making.
