Domaine de Thalie Pich is a vibrant and textural white wine made from a direct press blend of Chardonnay and Pinot Noir. It opens with aromas of green apple, citrus zest, and delicate floral notes, followed by a dry and refreshing palate. Domaine de Thalie is a small, organically certified estate located in the hills of Mâcon-Bray in southern Burgundy. It was founded in 2009 by Peter Gierszewski, who farms 4.5 hectares of vines including Chardonnay, Pinot Noir, Gamay, and Syrah. The vineyard soils are diverse, ranging from clay-limestone and red granite sands to rare Triassic marl, all tended by hand with a deep respect for biodiversity and natural rhythms.
Peter works with organic and biodynamic principles, using herbal teas, whey-based treatments, and natural ferments to promote vineyard health and reduce copper and sulfur use. All wines are made with native yeasts, and there is no fining or filtration. Pich was born out of the 2023 vintage when hail affected the Pinot Noir crop. Rather than lose the fruit, Peter blended it with Chardonnay in a direct press to create a unique and expressive wine that captures both innovation and terroir.
