Description
Du Vin Aux Liens is a natural wine project headed by the amazing Vanessa Letort. Predominately in Alsace and the Loire, she vinifies low-intervention wines alongside winegrowers who she has become connected with through a busy career in the French wine trade. Every grower she partners with works with the utmost care in the vineyard, which allows for beautiful natural wines to be made – vinfied, as she says, without “the net” of sulfur.
Wait, Wait, Wait is a delciously summery pet nat that Vanessa makes in collaboration with Domaine Sylvie Faller, in St-Hippolyte, a pictureseque town situtated at the foot of Alsace’s Vosge mountains
Soils: 0.60h, organic clay-Limestone
Blend: 80% Chasselas, 20% Muscat
Method: Chasselas direct pressed, added the macerated Muscats (6 days skin contact in whole bunches). Vinified in stainless steel vats. Ancestral Method process. Disgorged after 6 months of aging.
Total SO2: 9mg/L (no sulphites added)
