The pioneering batch from Easterton. Fermented to fully dry with pitched yeast from the pick of the 2020 season in stainless steel. Roughy 50/50 split between local Aberdeenshire apples and imported Somerset Dabinett to provide tannin and structure. The result is elegant and refined with a crystal clean palate. Vibrant acidity gives way to notes of pear, vanilla and green apple skins. Very subtle tannins draws it all together.
