This one is all about the yeasts. A blend of wild-fermented and pitched-yeast ciders. Roughly 80/20 split of local Aberdeenshire apples and imported Somerset Dabinett. The wild fermented portion immediately makes itself known on the nose, on the palate it’s sharp eating-apple acidity brings a delightful citrus quality, with the wild yeasts creating an appreciable depth and complexity.
