Salz der Erde is the latest chapter in the Salt of the Earth project that kicked off so successfully with the Sal da Terra Albariño. The idea behind the series is simple: producing saline, age worthy white wines at an accessible price. Salz der Erde is a crisp, dry, expressive Riesling with lemon rind and a salty lick to the finish. Made by Theresa Breuer, who runs leading Rheingau Estate Georg Breuer. Grapes are sourced from cool, south-west facing sites around the village of Lorch – the westernmost village in Rheinghau. The two vineyards – Krone and Kapellenberg – are at slightly different altitudes, Krone has slatey soils, while Kapellenberg soils are more quartzite. The parcels are vinified separately in stainless steel and neutral German oak, before blending and aging for ten months on lees in barrel.
