In late 2019, a fire in the fuel store of their biomass boiler shut down production, dramatically truncating the annual Glenwyvis output. Constraints breed creativity, and they were able to release this unique combination winter and summer runs of Concerto and Laureate barley, fermented for 120 hours and cut to an emerging GlenWyvis style in their squat pot stills. A unique trio of speciality casks contribute layers: red wine adds black fruit and spice, Moscatel adds floral notes of citrus while a lone Marsala cask brings unmistakable sweetness. A complex, delicate dram that embraces its youth.
Nestled beneath the sprawling mass of Ben Wyvis mountain in the Scottish Highlands, GlenWyvis is a new distillery that is owned by the local people of Dingwall. Distilled in 2019, this release brings together whiskies matured for three years in a combination of first-fill bourbon (68%), speciality wine casks (17%) and re-fill whisky (15%).
Expect ripe berry fruit and honeysuckle notes, Stewed apple sauce and fruit crumble on the palate and a long finish of oak with chocolate and spice.
