Ham Street Wines is the project of husband & wife team Lucie & Jules, who planted four hectares of vines just on the edge the Romney marsh four years ago.

They will be certified organic next year, but go above and beyond the minimum requirements, working with biodynamic teas and preparations, and having been no-till since last April. Soil health is an absolute priority here.

 A gentle foot stomp for the Pinot Noir, and an overnight maceration for the rest, all three varieties were pressed the next morning and began spontaneous fermentation in stainless steel. Aged for a few months in a combination of amphora and tank, the wine was bottled in spring with a little reserved juice to help fermentation continue in bottle. The finished wine is not disgorged, has no added sulphur
