Description
Inspired by Fl anders Reds of old, Doom Witch is a blended sour red ale combining 80% provision strength ‘ young’ stock beer aged in steel, with around 20% ‘m ature’ stock beer aged in red wine barrels for upwards of one year. The combination of old and young beers has produced a comple x sweet and sour fl avour profile with a subtle oak character. This blended base was refermented on 200g/l locally grown Scottish strawberries from the 2025 harvest. Our goal with this vintage was to use fruit as soon as possible after harvest, to best showcase its fl avours and arom as. The result is a comple x balsa mic strawberry blend with a developing woody funk.
