Description
We picked two standout barrels of our aged Flanders Red for this beer. These had been aging in whisky casks which had previously held the beer-soaked whole cherries producing our beloved Unholy Mountain kriek. We blended these barrels with a smaller portion of beer brewed and aged at the Hanging Bat in Edinburgh, which were aged in a quarter casks. The oxidative nature of aging in small barrels lent a rounded acidity when blended with the cherry barrels. We then re-fermented this blend on 200g/l of whole Scottish honeyberries for two months.
