Description
This wine is a tiny production of 252 bottles by Fredi Torres in collaboration with Modal wines. A blend of Palomino, Treixadura, Albariño, Mencia rose. Average vine age of 50 years old and altitude of 600m. The Albarino and Treixadura were fermented together, whilst the Palomino came a touch later and was done on its own. The grapes were destemmed and went through 3 weeks of skin contact. Fermentation and aging were both done in tank and finally blended with 20% Mencia rose that had been aging in barrel for a few months. The wine was blended in March 2021 and bottled in June. Unfined, unfiltered, no sulphite additions at any stage.
