Cabernet Franc, with a small amount of Grolleau. Whole bunch carbonic maceration for 6-8 days, then aged in tank.

Tired of the constraints of the classroom, former maths teacher Philippe set up shop in 2008. Now farming an eight-hectare spread across 16 parcels around Faye d’Anjou and Faveraye. Soils are mostly porous sand and schist with only a little clay. Vines are a mix of Chenin Blanc (4ha), Cabernet Franc (2ha) and some Grolleau (with a bit of Pineau d’Aunis in it – 2ha). Sulphur use is kept to a minimum with only a tiny bit added in the pied de cuvée for each wine.
