Description

Don Pippinu is made by Giuseppe in homage to his Grandfather who passed away in 2005 who was a great mentor to them both. From high up on the famous Mount Etna in Sicily which volcanic soils give a unique character to the wine.

In 2009, Giuseppe and Valeria started to work the vineyards. 2010 was their first vintage. The idea from the first day was to work the vines and make the wine just like Giuseppe’s Grandpa did: with minimum intervention and zero chemistry.

The vines grows on very deep, pumice rich volcanic soils, less rocky than their other red wine vineyards. Vines here are 80 years old on average. Grapes are crushed by foot, fermented by native yeasts and co-fermented with a composition of approximately 85% nerello mascalese and 15% nerello cappuccio each year. Macerations for the “Don Pippinu” average approximately 2 weeks. Elevage continues in stainless steel for approximately 12 months before bottling. No fining or filtration takes place for this wine, and no sulfur is added prior to bottling.
