Description
This farmhouse-style Saison is fermented with wild yeast harvested from malt dust and matured over two years, before being infused with elderflower picked from the tree beside the brewery as spring was becoming summer.
The elderflower brought this beer to life – after two years in the tank a funky and complex foundation needed top notes and focus; when we saw the first delicate white flowers on the elder tree we did a quick test and couldn’t have been happier with the results. The perfume-floral and woodsy flavour perfectly complimented to the deeply funky, fruity base beer, resulting in a bright, fresh Saison that is a true product of time and place.
There’s a bright zinginess that works with the last of the summer sun, and the deeper, woody notes offer comfort on cold, crisp autumnal days. We’ve packaged this in 750ml sharing bottles and it’s ideal to bring to the table to enjoy with a relaxed weekend lunch; a crisp tartness balancing citrus, bubblegum and scrumpy apple fruit enhances and amplifies grilled fish, braised pork and plenty more besides.
