Description
The area of these vineyards was named “Finca Los Halcones”, a unique place surrounded by pine trees, oaks and aromatic plants, located in the “Valle del Cabriel” declared a Biosphere Reserve by UNESCO. In this wine, we seek to express the uniqueness of our vineyards of vines that are more than 80 years old so that it is a wine with its own personality.
Grapes harvested manually with selection in the winery and cold pre-fermentation maceration. Fermentation with native yeasts of the grapes stands out to maintain the ”terroir”. The wine is the result of a selection of 55 French oak barrels, where only 16,600 bottles are made and another long period of time in the bottle, will create a wine harmonious, with personality and author’s seal. This wine can create sediments because it has not been filtered so as not to lose its identity.
