2022 was a fabulous vintage and it happily coincided with an on year in the pear orchard in Chew Stoke. We wanted to put a blend together as a premium cuvee, focussing on what we see as the most expressive, highest quality early and mid season varieties: Moorcroft, Yellow Huffcap, Taynton Squash, Barland and Pine. We have blended in the low acid (and lower ABV) varieties White Longdon, Barnett and Blakeney Red to keep it in balance with regards ABV, acidity and aroma. With high sugar levels in the extremely concentrated fruit this was never going to ferment naturally dry and so we embraced the residual sugar by racking once during the winter (Rural Method). The result is absolutely luscious: a hugely ripe, full and elegant expression of an exceptional (once in 50 year?) vintage. This is heady on the nose and pallet. Nose of burnt honey, baked pear, quince and rosemary. The tannins sit lightly on the tongue and help with the structure, the mouthfeel is luscious and very elegant, the sweetness pairs well with the fullness of the aromas. An opulent perry for nice dinners.
