A fantastic 23 year old Rum from Barbados, bottled by the team at Thompson Bros/Dornoch Distillery.
This was Pot and Column distilled in the year 2000 then left to mature in refill barrel
Official notes from Phil & Simon:
On the nose: Menthol & Chamomile, Eucalyptus oil, dried rosemary, Perollo Gordal brine, honey/mead & aged Sauternes.
The palate: Slightly farmy with plenty of the mint from the nose, ‘rotting’ tropical fruits, cigar tobacco, brine, copper coins & olives
Finish: Farmy & Funky with some fresh ginger warmth, Jamaica cake, clove oil
