Our turbid wort, made using barley and unmalted wheat was fermented using a mixed culture in stainless steel. Followed by spontaneous fermentation in ex-Pinot Noir wine casks for 20 months. Before a final, tertiary fermentation on blackcurrants. Forest Fruits and hedgerow. Balanced acidity. Oak sweetness. Subtle funk.
