A few months ago we managed to catch a glimpse of the Northern Lights down in Portobello. That magical moment, staring up at the spectacle in the sky from the pitch black beach, inspired our latest sour. Using a combination of Japanese yuzu zest and Brazilian ginger for a zestiness that dances across your tongue like those mesmerising lights in the sky, this is a lovely refreshing number to toast the end of Summer.
