An exceptional, mineral led expression of chardonnay that proves just how good non-topped up Jura Chardonnay can be. A great alternative for adventurous Puligny Montrachet lovers, taught, fresh and citrus fruit led with added complexity from 2 years in old oak barrel before release.
Match it with: Fish, meat in cream sauces, shellfish or can be enjoyed on its own as an appéritif.
Terroir: Gravel and early Jurassic limestone gravel-rich clay soils with blue marl.
Age of vines: 20-30 years
Vinification: Hand harvested and gently pressed with a pneumatic press // indigenous yeast only // malolactic fermentation in barrels the following spring with top-ups of the ullage every 10 days without So2 // 18 months on the lees // aged in old Burgundy barrels // bottling according to Maria Thun’s lunar calendar.
