It’s a common practice to ferment juniper in the Balkans for the purpose of making a lemonade substitute. This lovely refreshing Smreka inspired us to use fermented juniper to create Funk. Made by naturally fermenting juniper in a mixture of sea salt and lemons.
Tasting notes: Savoury lemon, citrus rind, and fresh pine, with an underlying saltiness adding depth of flavour.
This makes a fantastic dry martini or Southside with fresh mint leaves.
