The second of Holyrood Distillery’s new-make spirit series. The series highlights different elements of the brewing process which creates a large part of the flavour and character in the spirit. Crystal malt replaces 10% of the distiller’s malt which makes up the rest of the mashbill for this recipe. In beer, the crystalised sugars of this speciality malt lend clean, nutty, caramel flavours.
