The wines of Montsablé are inspired by the desire to craft elegant Burgundian Pinot Noir in Southern France. Working with growers in cooler sites of lower vigour, they seek out fruit that delivers clean flavours and great balance. Minimal oak is used resulting in Pinot with lifted cherry and wild strawberry fruit.

Traditional Burgundian methods are used for the vinification – pre fermentation maceration to extract colour and perfume before tannin followed by a gentle fermentation ensure maximum varietal intensity. A relatively low temperature ferment (24°C) helps to preserve the delicate and subtle notes of Pinot Noir. 10% of the wine is aged for 3 months in new French Oak.
