Description
Eau de Vie is a distillation from fruit. Think unoaked brandy. This is the pure distillation of the Dabinett cider above. No additions, adulteration or dilution. Two methods of distillation were used, a traditional hot copper one, which provides the superb sweet baked apple notes. This was blended with a room temperature vacuum distillation using a custom-built still, this is much less energy intensive and provides much crunchier, juicier notes. The spirit was then rested for 13 months in stainless steel. Best served neat.
