Description
This year, the red from Westwell is only Pinot Noir and not the Double Pinot of 2022.
For the winemaking process, 70% of the grapes, weighing 2.2 tons, were destemmed, and 30%, weighing 1 ton, were kept as whole bunches. These were layered in a tank to undergo a special type of fermentation called semi-carbonic maceration. The free-run juice, which is the juice that flowed naturally, was then transferred to stainless steel tanks to finish fermenting with natural yeasts. Sulfur dioxide (SO2) was added during racking and bottling. The wine was bottled in May 2023 and sealed with a cork and wax. When you smell it, you might notice aromas of red cherry and violet. On the palate, you’ll taste flavors like wild strawberry, redcurrant, and raspberry. It pairs well with game, mushrooms, or a good Kentish cheese.
