Description
In early 2023, Signatory Vintage released a pair of Caol Ilas with contrasting flavours as part of their Cask Strength Collection, one of which is the 15-year-old Caol Ila 2007. While the initial cask used in the whisky’s maturation process is unknown, it was finished in a first-fill Oloroso sherry butt for the final two years, which has imparted a deep chestnut hue to the natural colour of the whisky.
The cask yielded 695 bottles of the 15-year-old Caol Ila, which has a potent but approachable natural cask strength of 53.7%.
A big whisky, with notes of toasted hazelnut, dried figs, spice and bacon frazzles. A great addition from the sherry finish with raisin adn dark chocolate over oak smoked BBQ and brine.
